Gelatin is used to make gelatin jelly, candy, gum and
other deserts. Because of its foaming properties, gelatin can be added
in the manufacturing of marshmallow. Major application of gelatin for
edible and confectionery use is for table jelly, gummy candy and marshmallow.
Gelatin of 250 Bloom is more or less widely used for above application.
Marshmallow uses foaming properties of gelatin. Gelatin is often used
in ham and sausage because of its cohesive power. Gelatin can be added
to transparent juice and wines as well.
